Description: The Minnesota Department of Education (MDE) – Food and Nutrition Service (FNS) is excited to offer the annual two-day School Nutrition Back to School Essentials 2019 training August 13-14, 2019. This training will be held in six locations in Minnesota and will focus on essential content for school nutrition program operations. Meal Service Basics will be covered on August 13 and Free and Reduced Price Process will be the topic for August 14. Training will be provided using a Blended Method where content is broadcast from MDE to each location where MDE staff will facilitate discussion and activities. Space is limited by location and registration is available on a first come first serve basis.
Meal Service Basics: Tuesday, August 13, 2019
This full day session will cover essential content related to meal planning and service for school breakfast, lunch and afterschool snack programs. The content will be broken down into:
- Food Components and Meal Patterns
- Food Production Records
- Menu Documentation – Recipes and Labels
- Offer vs. Serve for Breakfast and Lunch
